Baking Bread in Perkins Brick, Coal-burning Oven

| Summary: | Jackie Bennett, now in his 80's, worked in this bakery for over 40 years before it closed down. Denis Quinlin who took over the Courtyard complex recently resurrected the Perkins coal-burning, brick oven originally installed in 1919 and persuaded Jackie to return to baking using the original recipes, a closely guarded secret. 200 pieces of bread a day are turned out for the delicatessen and restaurant. The only similar oven in the country is at Roscrea Cistercian Monastery which is turf-burning. |
